24 hours before it is time to go in the smoker the shoulder needs prepared.
Fully thawed if you have frozen meet.
Cover the meat with the mustard.
Sprinkle BBQ rub all over the meat rubbing it in as you go.
Cover and put in the refrigerator.
Take meat out of the refrigerator and sit on counter 2 hours before the smoking starts.
Put in warmed up smoker at 220 degrees for 15 hours.
